Ingredients:
- 2 cups all-purpose flour
- 2 cups sugar
- 2 eggs
- 1 tsp baking soda
- 1 tsp vanilla extract
- Pinch of salt
- 1 (20 oz) can crushed pineapple (undrained) in its own juice
- 1 cup chopped nuts (optional)
- ½ cup butter (1 stick), softened
- 1 (8 oz) package cream cheese, softened
- 1 tsp vanilla extract
- 1 ½ cups confectioners’ sugar
- Coconut for garnish (optional)

- Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking pan.
- In a large bowl, mix together the flour, sugar, eggs, baking soda, vanilla extract, and salt until well combined.
- Stir in the crushed pineapple (including the juice) and nuts (if using).
- Pour the batter into the prepared pan and bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean. Let the cake cool completely before frosting.
- To make the cream cheese frosting, beat the softened butter and cream cheese together until smooth. Add in the vanilla extract and gradually mix in the confectioners’ sugar until fully combined.
- Once the cake has cooled, spread the frosting evenly over the top. Sprinkle with coconut (optional) for garnish.
