Ingredients
- 3/4 cup (180 ml) cold water
- 5 tablespoons unflavored gelatin powder
- 1/2 cup strongly brewed green tea (use 4 tea bags)
- 1/3 cup (80 ml) ginger juice
- 1/4 cup (60 ml) fresh lemon juice or preservative-free bottled lemon juice
- Optional: honey, to taste
Instructions
- Bloom the Gelatin:
- Pour 3/4 cup of cold water into a medium saucepan.
- Sprinkle the gelatin powder evenly across the surface of the water. Let it sit undisturbed for 5–10 minutes, allowing it to bloom and absorb the water.
- While the gelatin blooms, steep 4 green tea bags in 1/2 cup of hot water according to the tea’s steeping instructions (about 3–5 minutes).
- Remove the tea bags and set the brewed tea aside.
- Add the brewed green tea, ginger juice, and lemon juice to the saucepan with the bloomed gelatin.
- Place the saucepan over low heat and stir gently until the gelatin dissolves completely and the mixture is smooth. Do not let it boil, as this can weaken the gelatin’s setting power.
- If desired, stir in honey while the mixture is still warm. Adjust to your taste preference.
- Carefully pour the mixture into silicone molds or a baking dish lined with parchment paper.
- Use a spatula to smooth the surface if using a baking dish.
- Transfer the molds or dish to the refrigerator. Let the chews set for at least 2 hours, or until firm to the touch.
- Gently pop the chews out of the molds.
- If using a baking dish, slice the mixture into bite-sized pieces with a sharp knife.
- Smooth Gelatin: Stir continuously while warming the mixture to avoid lumps.
- Perfect Ginger Juice: Grate fresh ginger and squeeze it through a fine-mesh sieve or cheesecloth to extract pure juice.
- For Vegans: Substitute gelatin with agar-agar, following its specific preparation instructions.
