Gumdrops

Ingredients

  • 4 cups sugar (or more to taste)
  • 4 tablespoons gelatin powder
  • 1 1/2 cups water
  • 1 cup cold water
  • Lemon or vanilla extract (to taste)

Instructions

  1. In a small bowl, mix the cold water and gelatin powder. Stir until the gelatin is completely dissolved.
  2. In a medium saucepan, heat the water and sugar over medium heat. Stir constantly for about 5 minutes, until the mixture reaches 230°F (the softball stage) using a candy thermometer.
  3. Carefully pour the dissolved gelatin mixture into the hot sugar syrup. Stir well to combine and remove from heat.
  4. Divide the mixture into separate cups or bowls. Add a few drops of food coloring to each cup if you want a glossy look.
  5. Pour the mixture into various-shaped molds and let it set at room temperature until firm.
  6. Once the gumdrops are set, carefully remove them from the molds.
  7. Roll the gumdrops in sugar to coat them before serving.
