Ingredients:
- 1 lb (450g) ground beef or lamb
- 1 small onion, finely grated
- 1/4 cup (15g) fresh parsley, chopped
- 2 cloves garlic, minced
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1 tsp ground allspice
- 1/2 tsp ground cinnamon
- 1/2 tsp ground black pepper
- 1/4 tsp ground cayenne pepper (optional)
- 1 tsp salt
- 2 tbsp olive oil (for brushing)
Directions:
- Prepare the mixture: In a large bowl, combine ground beef or lamb, grated onion, chopped parsley, minced garlic, ground cumin, coriander, allspice, cinnamon, black pepper, cayenne pepper (if using), and salt. Mix well until all the ingredients are evenly incorporated.
- Shape the kebabs: Divide the mixture into 8 equal portions. Shape each portion into an oval or cylindrical shape, about 1 inch thick. If using skewers, thread the kebabs onto the skewers.
- Preheat the grill: Preheat your grill to medium-high heat. Brush the grates with olive oil to prevent sticking.
- Grill the kebabs: Place the kebabs on the grill and cook for about 8-10 minutes, turning occasionally, until they are browned and cooked through.
- Serve: Remove from the grill and let the kebabs rest for a few minutes. Serve with pita bread, salad, and your favorite dips like tzatziki or hummus.
