Shamrock Crème Pie

Ingredients

    The Crust:

  • 1 ½ cups chocolate cookie crumbs (like Oreos, without filling)
  • 6 tbsp unsalted butter, melted
  • The Filling:

  • 8 oz (1 package) cream cheese, softened
  • ½ cup powdered sugar
  • 1 tsp peppermint extract
  • A few drops of green food coloring
  • 1 cup heavy whipping cream, whipped (or 1 tub of whipped topping)
  • Garnish:

  • Whipped cream
  • Chocolate shavings
  • Green sprinkles or edible glitter
  • Mint leaves

Instructions

    Make the Crust

  1. In a medium bowl, mix the chocolate cookie crumbs and melted butter until the crumbs are evenly coated.
  2. Press the mixture firmly into the bottom and up the sides of a 9-inch pie dish to form the crust.
  3. Refrigerate the crust for at least 15–20 minutes to set while preparing the filling.
  4. Prepare the Filling

  5. In a large mixing bowl, beat the softened cream cheese and powdered sugar together until smooth and creamy.
  6. Add the peppermint extract and a few drops of green food coloring. Mix well, adjusting the color to your liking.
  7. Fold in the whipped heavy cream (or whipped topping) gently, ensuring the filling remains light and fluffy.
  8. Assemble the Pie

  9. Spoon the filling into the prepared crust, spreading it evenly with a spatula.
  10. Smooth the top for a neat and polished look.
  11. Garnish and Chill

  12. Garnish with whipped cream, chocolate shavings, green sprinkles, and mint leaves for a festive touch.
  13. Cover the pie and refrigerate for at least 4 hours, or overnight, to allow the filling to set completely.
