Ingredients :
- 180 grams of flour
- 2 eggs
- 2 deciliter buttermilk
- ½ teaspoon baking soda
- 1 pinch of salt
- 1 teaspoon sugar
- 2 tablespoons olive oil
- ½ teaspoon cardamom (organic) grated lemon
- Small fresh pieces of apple.
- Butter for frying.
Instructions :
- Mix the dry ingredients together: flour, baking soda, sugar, salt, cardamom and the grated lemon.
- Divide the 2 eggs into whites and yolks.
- Whisk together the egg yolks with the buttermilk. Mix the mixture with the dry ingredients and add 2 tablespoons oil to the dough. Then let the dough rest for about 30 minutes.
- After half an hour, whisk the egg whites and then turn them into the dough.
- Heat up the bleskive iron and bring a smal piece of butter into each recess. Pour some dough into each of the holes.
- Place a small piece of apple into each hole when the dough becomes stiff at the bottom.
- Turn the bleskiver. To achieve the most harmonious, round shape, flip the bleskiver several times while on the pan.
- The æbleskiver are done when you can stick them with a needle or fork, without any dough hanging.
